MUTTON CHUKKA FRY IS ONE OF A LAMB DELICACY INSPIRED BY THE FAMOUS MADURAI CUISINE. IT'S A SAUTEED DRY LAMB WITH GROUND SPICES AND MASALA WHICH CAN BE ACCOMPANIED WITH RICA AND RASAM.
IN THE SORROUNDINGS OF MADUURAI THE FEAST WHICH IS CALLED "KIDAAI VIRUNDHU" WILL NOT BE COMPLETED WITHOUT CHUKKA VARUVAL.
INGREDIENTS
- MUTTON - 1/2KG
- CUT INTO SMALL PCS
- ONION SLICES - 150 GM
- CURRY LEAVES - 1 SPRIG
- OIL - 100 ML
- DRIED CUMIN - 1TSP
- BLACK PEPPER - 1 TSP
- RED CHILLIES - 6 NOS
- DRIED CURRY LEAVES - 1 SPRIG
- TURMERIC PR - 1/2 TSP
- CHILLI PR - 1 TBSP
- CORIANDER PR - 1TBSP
- SALT - TO NEED
- CORIANDER LEAVES - 1 SPRIG
METHOD:
BOIL THE LAMB WITH A PINCH OF SALT AND TURMERIC PR
DRYLY SAUTE THE PEPPER ,CUMIN , RED CHILLIES , DRIED CURRY LEAVES AND MAKE IT AS A POWDER
HEAT THE OIL.
ADD CURRY LEAVES AND SLICED ONIONS .
SAUTE IT WELL UNTIL IT TURNS TO GOLDEN BROWN
ADD THE BOILED LAMB AND MIX IT WELL WITH ONIONS
ADD CHILLI PR , TURMERIC PR AND THE POWDERED MASALA
SAUTE IT WELL UNTIL THE MASALA COATS TO THE LAMB
COOK IT SLOWLY BY SPRINKLING SOME WATER
ADD SALT TO TASTE
FINISH WITH CHOPPED CORIANDER LEAVES
