KOZHI VARUTHA CURRY



INGREDIENTS

CHICKEN WITH BONE - 1KG
OIL - 100 ML
SOMPH - 1/2 TSP
CURRY LEAVES - 1 SPRIG
ONION - 200 GM
TOMATOES - 150 GM
GINGER GARLIC PASTE - 50 GM
GREEN CHILLIES SLIT - 5 NO
TURMERIC PR - 1TSP
CHILLI PR - 1 TBSP
CORIANDER PR - 3 TBSP
PEPPER PR - 1TSP
SALT - TO NEED
CORIANDER LEAVES - 1 SPRIG


UTENSILS NEEDED
KADAI, BIG LADDLE

METHOD :

  1. HEAT THE OIL
  2. ADD SOMPH AND CURRY LEAVES FOR TEMPERING.
  3. SAUTE THE ONION UNTIL GOLDEN BROWN.
  4. ADD GINGER GARLIC PASTE AND MASALAS
  5. SAUTE IT WELL UNTIL THE RAW SMELL GOES.
  6. ADD CHICKEN TO THE MASALA AND MIX IT WELL .
  7. AVOID BURNING THE PAN BY SPRINKLING WATER TO IT
  8. ADD TOMATOES TO THE CHICKEN COATED WITH MASALA
  9. COOK IT WELL BY SPRINKLING THE WATER
  10. SPRINKLE SOME PEPPER AND CORIANDER LEAVES TO FINISH
  11. CHECK SALT FOR SEASONING
